FRESH LEMON MOLD
This is gorgeous after a rich meal or at a BBQ in hot weather!
| Grated rind and juice of 2 lemons|
| 12 tablespoons water|
| 4oz (100g) sugar|
| 1 sachet (11.7g) powdered gelatine|
| 10 fl oz (285ml) milk|
Put all except the milk into a pan. Warm until dissolved.
Put half of the milk into a bowl. Add the lemon mix and leave.
When cool but not set put the rest of the milk into a wetted jelly mould.
Add the strained
lemon mix. DO NOT STIR!
Chill until set then turn out.
This is also nice served in individual glass dishes.
