FRESH LEMON MOLD


This is gorgeous after a rich meal or at a BBQ in hot weather!

INGREDIENTS
      Grated rind and juice of 2 lemons
      12 tablespoons water
      4oz (100g) sugar
      1 sachet (11.7g) powdered gelatine
      10 fl oz (285ml) milk

METHOD
      Put all except the milk into a pan. Warm until dissolved.
      Put half of the milk into a bowl. Add the lemon mix and leave.
      When cool but not set put the rest of the milk into a wetted jelly mould.
      Add the strained lemon mix. DO NOT STIR!
      Chill until set then turn out.
