8oz (200g) dark cooking chocolate
2oz (50g) margarine
4oz (100g) sugar
4oz (100g) dessicated coconut
2oz (50g) sultanas
2oz (50g) glace cherries, quartered
Grease a swiss roll tin. Melt the chocolate and spread over the base of the tin. Put into the refrigerator to cool.
Mix the margarine & sugar and cream well. Add 1 beaten egg, the dessicated coconut, sultanas, and the quartered glace cherries. Mix well and spread over the chocolate base.
Bake in a preheated oven at 300-325°F, (150-170°C) Gas mark 2-3 for 30 mins or so until golden brown. Leave to cool, then cut into small slices with a sharp knife.
This is dish is very sweet and "more-ish". A disaster if you're dieting!
